Ander Mendibe
We continue our Employee Spotlight with Ander. He is the Manager at Gambas and will share his Season + Taste journey with us.

How long have you been with Season + Taste and what’s your background?

I’ve been with Season + Taste for one and half years, since we opened Gambas. I had previously worked at Wild Beer and the Tobacco Factory.

Why did you join the Season + Taste group?

I knew about the company through my friend Sara Sanna, the current Operations Manager. She told me that Gambas was going to open and I was really excited about this project. I love seafood and I even went to the Gambas pop-up prior to their opening. So I decided to apply for a position

What’s the best thing about your role?

I like to guide customers through the whole experience. I always suggest starting with an aperitif - maybe a vermouth, then some starters such as jamon and olives, followed by seafood, and then desserts paired with a nice sweet wine. And why not finish with a Gin & Tonic!? Seeing people smiling at the end of their meal is what I enjoy the most.

What’s the most challenging thing about your role?

When I first became manager the role came with a lot of responsibility, looking after the team as well as our customers and their experience. Keeping the staff happy and welcoming new staff to the team was one of the most challenging things. I find this much easier now as I’ve settled into the role over the past 9 months.

What sort of training have you been on?

I’ve had a lot of training. Recently I’ve done my WSET level 2 as well as Leadership and Customer Experience trainings. And, of course, we’ve been in Spain trying food and visiting tapas bars and producers.

What would you say to people who are thinking of joining the team?

They should join Gambas if they want to have fun and work hard. The summers in particular are really busy here and it is a lot of hard work, but also very rewarding.

Where do you see your role progressing?

I haven’t thought about it too much, but I’m very keen to learn about the financial aspects of the restaurant, not just Gambas but the other Season+Taste restaurants too.

Which is your favourite Season + Taste venue?

(laughs) I can’t lie, it is Gambas. I think that Belle, our Assistant Manager, has done a great job working on the ambience of the restaurant to make it really appealing and cosy and the food is amazing - I never get tired of what we offer. We also offer special wines and gins of the month, and the service is really great!

How long have you been with Season + Taste and what’s your background?

I've now been with the company for 4 months. Before working for Season+Taste I worked at a coffee roaster and cafe in Singapore where my role was focused on marketing and organising coffee related events. I am now the manager at Bakers and Co. and am also heading our sustainability project along with Tasha, our events manager.

What’s the best thing about your role?

The people. I work with a great team of people and we have great customers - there is a real community spirit at Bakers. I also really enjoy the lack of routine, I never quite know what each day will bring and am never stuck to the same timetable.

What’s the most challenging thing about your role?

As well as being the best part of my role the most challenging part is working with people, it takes a lot of energy to keep everyone happy and manage people's expectations, especially when we have technical issues!

What sort of training have you been on?

In my previous role I'd been on loads of sensory training so had learnt plenty about the theoretical side of coffee, since joining Season+Taste I have been on a lot of hands on training, mostly with Extract our amazing coffee suppliers. I now feel that I really understand what makes a great cup of coffee, and can make one too!

What would you say to people who are thinking of joining the team?

Do it! This is such a fun company to work for, but I also feel really listened to here. I'm really passionate about making the company more sustainable, and have already been given the space to make those changes.

Where do you see your role ?

My hope is that I can develop sustainability processes at Bakers and that they will then be used throughout the company. I'm really excited to look at how we run the company now and what we an do to make a positive change. We have already started to make small changes, like switching to Who Gives a Crap toilet paper, https://uk.whogivesacrap.org/, and working with great local suppliers like Wilding and the Community Farm. 2020 is going to see many more changes, and I'm really excited about that.

Which is your favourite Season + Taste venue?

Obviously I love Bakers & Co. as it's where I work and feel most at home - but you can't beat the bar at Bravas for a glass of red at the end of a stressful day!
